100 g *Quince jam
1 cl *Water
300 g *Feta
1 EL *Dried oregano
1 EL *Olive oil
3 EL *Milk

60 g *Butter
4 Blatt *Filo pastry

*Using a hand blender, blend the quince jam with water until you have a soft and smooth texture.

*Use some paper towel to moisten the inside of a cake tin measuring approximately 23 cm long and 10 cm wide. Cover in cling film. Use some paper towel to get rid of any air bubbles. This will make it easier to remove the tin later.

*Spread the quince jam on the bottom of the tine and smooth it out well. Place the tin in the fridge and leave to harden for at least 5 hours.

*In a bowl, finely mash the feta with a fork. Add the dried oregano, olive oil, milk and pepper. Mix with a spatula until you have a smooth paste.

*Once the jam is frozen, spread the feta mix evenly inside the tin with a slightly damp spoon to smooth the top. Place the tin in the fridge for 3 hours.

*Once it has hardened, turn it out from the tin. Gently heat the bottom of the tin with hot water, then turn it out onto a chopping board. Remove the clingfilm and leave it to brown slightly at room temperature (5 min) to make cutting it easier. Cut it crosswise into 8 regular pieces.

*Melt the butter for 1 minute in a bowl in the microwave.

*Roll out the filo pastry sheets, then cut them into 4 so you have pieces that measure 15 cm x 19 cm. Place the first piece upwards facing you and brush it with butter. Place a second piece on top, and also brush it with butter . Place a piece of feta cheese widthways along the edge of the pastry, then roll it up to wrap it in the pastry. Fold the corners neatly like a gift package, then trim off any excess pastry if necessary. Do the same for the other pieces. Set aside in the fridge.

*Place the pieces in the Easy Fry with the standard tray, and start the AIR FRY programme at 200°C for 7 minutes. Once cooked, leave to cool and enjoy.
